Christmas Day Instructions

 CHRISTMAS DAY 2021

SET THE OVEN TO 200c

(VG) CELERIAC SOUP- gently warm in a pan and serve with the hazelnuts and brown butter & Rye bread.

CHALK STREAM TROUT- to be eaten room temp with the fennel/beetroot salad, citrus dressing, Rye bread & horseradish

REMOVE ALL LIDS BEFORE COOKING - Everything should take around 20 mins at 200c Fan Assisted, but obviously personal taste and individual ovens may mean that you would like to cook things a little longer (potatoes/parsnips…..).

THE TURKEY BREAST WILL NEED TO BE REMOVED FROM THE PACKAGING. We might suggest that the Breast, Leg and Pigs all go into one shallow baking tray to cook. With the Turkey Breast, make sure the sage butter is on top of the meat when it goes in the oven. Ensure it is all piping hot before serving.

MUSHROOM PIE- remove all lids. Hot Crust pastry Pie and Oyster mushrooms in the oven for around 20 mins. Miso and Onion sauce-gently warm in a pan as you would gravy.

POTATOES, CARROTS, PARSNIPS, SPROUTS, STUFFING- remove lids, place on a baking tray in the oven. 20 mins

GRAVY - warm gently in a pan. BREAD SAUCE - either room temp or warm in a pan depending on preference. CRANBERRY SAUCE - room temp.

CHRISTMAS PUDDING - steam in a pan for 20 mins, remove white paper wrapping. Place in a pan and top with water to around 1/3-1/2 way up the pudding. Gently simmer for 20 mins with a lid on the pan. If you choose to microwave, obviously remove all foil first. Place in a bowl with a plate on top, microwave on high for around 3 minutes.

BRANDY CREAM - gently heat in a pan and serve with the pudding.
